Botanical Name: Foeniculum vulgare 'Purpureum'

A stunning feathery perennial with finely divided bronze-purple fronds that deepen in colour during cooler weather. Growing 1.2-1.8m high, this variety creates strong vertical accent and beautiful colour contrast in herb gardens, cottage gardens, and mixed pots.

Culinary Uses: Sweet anise-flavoured fronds are delicious in salads and with fish dishes. Use stems to flavour stocks and soups. The flower pollen is prized as a finishing spice - known as "the spice of angels" - while seeds are perfect for baking, teas, and spice blends.

Garden Benefits: Produces flat yellow flower umbels in spring-summer, attracting beneficial insects like hoverflies, parasitic wasps, and native bees. Readily self-seeds, so deadhead before seeds drop if you don't want volunteers. Cut back low after flowering for bushy regrowth.

Unlike Florence fennel, this variety doesn't produce an edible bulb - it's grown for its ornamental bronze foliage, aromatic fronds, and seeds.
